Used as early as the 7th century to improve the smell of kitchens and hospitals. Hyssop leaves are used to flavor salads, soups, liqueurs, and stews. ESeed Savers Exchangential oil used in perfumes. Attracts bees, butterflies, and hummingbirds. Plants grow 18-24".

Hyssop has a strong, almost bitter flavor so it can be used sparingly in salads or soups. The flowers are often used to help scent a room the essential oil extracted from the plant is one of the many herbs and flowers used in the production of the famous French "Chartreuse" liquor.

Growing Instructions

Instructions - Sow seeds indoors just beneath surface of soil. Success is greatly improved if seeds are placed with soil into a plastic bag and refrigerated for 4-6 weeks. Once removed from the cool, place in an area that is between 55-65°F. Plant out after danger of frost has passed in late spring. Prefers average well-drained soil.

Delightful

Love having this in the garden - wonderful aroma, native bees go crazy for the flowers, and gold finches enjoy the seeds in fall. Overwintered easily and withstood our crazy heat waves (zone 9)!

Beautiful, fragrant, hardy

I have planted this in two gardens, one with rocky soil and one with heavy clay. It has thrived in both! Withstands hot conditions (90-100 degrees all summer on a park strip with lots of reflected heat from the road and sidewalk) and overwinters in the cold like a champ. Bees ADORE the blossoms and it blooms for a long time, even without deadheading. Highly recommend.
