It’s the beet that keeps on growing - the roots can be harvested in mid-summer, but will continue to grow to quite a large size while still maintaining their flavor. While they typically grow 4-6" long and 4-5" in diameter and weigh 1-3 pounds, Stanley Yancic of Wilkes Barre, Pennsylvania, who donated the variety to Seed Savers Exchange, says the roots can tip the scale at 5 pounds. When Stanley donated the variety in 2004, he had been growing it for more than 30 years. The beets hold well in the field and can be sown in the spring and left in the ground until fall.

Instructions - Sow seeds outdoors as soon as soil can be worked in spring. Seeds will germinate in 5-10 days. Beets can be planted at two-week intervals for continuous harvests. All parts of the beet plant are edible.
