Peppery flavor used to season a wide array of dishes—beans, sausage, cabbage, wild game, and even vinegar. Both fresh and dried leaves can be used. Somewhat lanky plants grow up to 18" tall.

Summer savory has a more delicate, sweet aroma than its sister-plant, winter savory.


It is used as a substitute for sage in Canadian dishes to flavor dressings such as cretonnade. It is also used to flavor beans and is part of the standard "herbs de Provence" mixture used in French cooking. Summer savory also makes an excellent addition to sausage seasonings and stew.

Growing Instructions

Instructions - Sow seeds outdoors after the danger of frost has passed. Shelter plants from strong winds. Prefers well-drained soil.

Great for the bean patch

I plant summer savory next to my bush beans every year and love them. They draw out the beneficial pollinators while keeping pests away, and they smell nice. I’ve used these seeds the last 7 years. One packet goes pretty far but careful because the seeds are tiny. You can sow them directly in the ground but I recommend starting them indoors 4 weeks before last frost. Many times when I directly sowed I’ve accidentally pulled them up while weeding! Let them get a little taller, then set them out.
