The Story of Copenhagen Market
This historic variety of cabbage is a Dutch heirloom cabbage introduced by H. Hartman & Company in 1909.
There are references to cabbages as far back as the ancient Greeks and Romans, but it is unknown whether or not they had the same dense-headed varieties we associate with cabbage today. Heads of cabbage are explicitly mentioned in the 1536 botanical treatise De Natura Stirpium by Jean Ruel.
Early English colonists brought varieties of cabbage to the Americas in the 17th century.
