Pablano peppers can charred over a burner or under the broiler, then stuffed with cheese and a mixture of meat or vegetables and spices. You can then bake them in the oven or batter and fry them in a pan and serve with fresh tomatoes or salsa.
Dried ancho peppers can be ground into a powder and added to spice rubs for meat and fish. The flavor also pairs well with chocolate, pineapple, and sweet potatoes.
