Bell peppers are sweetest when they mature to a full red, but the crunchy green flesh is a great addition to many savory dishes. You can stuff peppers with quinoa, rice, or a mixture of cheese and beans and bake or cook rings of pepper in a skillet with a fresh egg inside.

Roast your red peppers over a burner or under a broiler, then peel and puree with hummus or slice and add to grilled eggplant and mozzarella sandwiches with fresh basil.

Instructions - Peppers need warm soil to germinate, so you'll have the best luck seeding them in soil trays or pots that have a heating mat under them. Start your seeds indoors about 8 weeks before your last frost and sow them 1/4 inch deep. It will take around 14 days for the seeds to germinate. The soil in your garden should have warmed enough to plant peppers outside a few weeks after your last frost. Place your plants 12-24 inches apart and full sun. The fruit will be mature 70 days after transplanting. There are about 4.8k seeds in an ounce of King of the North peppers.
